今天幫人文學校的老師們準備午膳,看到大家吃得喜滋滋,我也很快樂。其實我並不善做素食料理,未免自己出不了餐,我討了一個做蔬食餐而非宗教素的方便。做起來也就容易多了。 今天最受歡迎的是胚芽米芝麻糊。做法在之前已公佈。第二名應該是麻婆豆腐,做法如下: 材料:豆腐,素肉末,榨菜末,大蒜末,辣豆瓣醬,素蠔油,蔥花,地瓜粉+水, 1.小火將大蒜末爆香,下辣豆瓣醬稍炒一下,入素肉末炒香。 2.豆腐切小塊,讓它出水一下。(若能先川燙更好,這樣豆腐就不會再出水,而且變得有彈性)下鍋與步驟1拌炒。 3.加素蠔油與少許水,到您想要的鹹度與醬汁量。 4.滾開後加地瓜水勾薄芡。加榨菜末增加口感,沒加也OK,下蔥花,上菜。 百菇燴麵/玫瑰鹽花椰/麻婆豆腐/蔬菜炒飯/芝麻糊10/19/2014 in Cooking Tips / Taiwanese Cuisine by linda
